WATERFRONT INSULAR HOTEL DAVAO’S NEW EXECUTIVE CHEF


Waterfront Insular Hotel Davao takes pride to introduce its new executive Chef, Chee Ming Koay. Chef Ming is a Malaysian Chinese, born and raised in Kuala Lumpur, Malaysia. At the age of only 19, he started his love for cooking. He always credits his mother for instilling in him the passion for cooking.

Chef Ming earned his diploma in Hospitality/Tourism Management at Hotel Catering Institutional Management Center in Kuala Lumpur. He also attended a short course in creative seafood preparation at the University of Toulouse.

He started his culinary journey as a Second commis in 1996 at Renaissance Hotel (KL). After a year, he moved as Demi Chef at the Sheraton Imperial (KL). At the Regent Kuala Lumpur in 2000, he attained the Chef de Partie position. The Palace of the Golden Horses-Selanor Malaysia earned him the title Sous Chef. In a relentless pursuit for excellence in the Culinary World, shuttling within the International Hotel Brands and Chains, Chef Ming joined the Mandarin Oriental Hotel (KL) in 2004 as Sous Chef. Chef Ming widens his culinary expertise, venturing outside Malaysia to be part of the pre-opening team of the Sofitel Forebase Chongqing in China where he and his team set-up the themed Outlets and Banguets as Executive Chef.

He broadens his knowledge in Gastronomy by participating in various culinary activities abroad. He was able to reap a number of prestigious awards such as the Black Box Culinary Challenge in which he won in the national level in the Live Hot Cooking 3 course meal category.

Another highlight of his career was in 1997 when he was one of the ten finalists from Malaysia in the Conferie de la Chaine des Rotisseurs. In 1999, he won the World Junior Chef Challenge in Auckland, New Zealand. Also in 1999, he won the triple bronze medal for Plate Dishes, Plate Appetizers and Live Hot cooking. In 2000, he was a silver award winner in Live Hot Cooking for New Asia Cuisine Category in the Food/Hotel Asia Singapore.

After developing his culinary expertise in different hotels abroad, Waterfront Insular Hotel Davao is proud to introduce Chef Ming.
