Yuletide Take-Aways and Hampers

A fine selection of holiday goodies and treats, delectable cakes, and confectionery products such as chocolate Santa Claus and pralines, Christmas fruit cake and stollen cookies, gingerbread house, chocolate bell and chocolate boot with pralines, German chocolate cake, Saint Honore, Swiss chocolate pralines, among many others, will be available as splendid take-aways at the hotel’s French-style pastry shop Patisserie.

Manila Pavilion’s signature fine dining restaurant The Rotisserie will indulge holiday revelers with sublime four-course dinner set menus on December 24 and 25. Gourmet holiday set menus that come with a complimentary glass of red or white wine at Php2,750 nett per person include: salad of prawn asparagus sphere with balsamic vinaigrette; consommé of guinea fowl with vegetable confit and ravioli; roast turkey with potato gratin and seasonal vegetables; and, oven-baked pumpkin pie with homemade chocolate ice cream; or, salad of prawn asparagus sphere with balsamic vinaigrette; lobster bisque; surf and turf roast beef and sea bass marmalade of shallot with polenta cake; and, freshly baked chocolate or lemon soufflé.

Prepared with the most delightful of ingredients and seasonings by Peony

Garden’s Chinese culinary team led by executive Chinese chef Lee Yan Feng, the

exciting and vibrant flavors of the ocean’s fresh catch surface in their finest form.

‘Eating fresh, live seafood is nutritionally more beneficial as compared to those which

have been frozen or harvested by chemical means’, says Kok Fai Ho, director of food and beverage.

A delectable harvest of the day’s freshest catch that can be enjoyed daily in a

special a la carte menu for lunch and dinner starting at Php300 per order include: deep-

fried mussel with crispy flavors; pan-fried mussel with special prawn sauce; steamed

scallops with shell and garlic sauce; seafood vegetable salad combination; stir-fried crab

meat with two kinds chicken egg; steamed sea mantis with soya sauce; deep-fried sea

MANILA PAVILION WINS TWO GOLDS IN THE NATIONAL FOOD SHOWDOWN 2010

Manila Pavilion Hotel prides itself with two gold medals in the recently concluded culinary competition, The National Food Showdown 2010 held at the A.Venue Events Hall in Makati City.

The cold kitchen team led by demi chef Michael Baet together with Eduardo Layug, Jr and Randy Aligora of The Rotisserie, took the top spot in the gourmet cold buffet challenge with their impressive lineup which included among others: goat cheese flan with balsamic reduction, pesto oil, and roasted beetroot; Asian duck confit with raisin and celery stalk; U.S. turkey with dried mango and pumpkin seeds; baby leeks and bay scallop terrine; mackerel saffron oil; and, Asian-cured kingfish with sweet mustard sauce.

Chef de partie Willar Eustacio took another gold for the plated desserts category with his delightfully unique and tastefully sweet creations of bavarois spiced red wine with sour cream parfait, organic green apple, and apricot sauce; flourless chocolate cake with white ganache, pistachio praline, and peach and raspberry sauce; pandan peanut butter crepes with nougat mousseline sauce; and, trio chantilly with anise sabayon and blackberry sauce.

The Rotisserie’s Michael Macalalad and Randy Aligora received a diploma for displaying their innovative culinary skills in the modern chef entry.
