Dining in the city becomes even more exciting with Waterfront Insular Hotel’s Filipino Food Fiesta Dinner Buffet at Café Uno.

It was indeed a festive Araw ng Davao celebration for tourism executives, corporate patrons, industry partners and friends from the media who were all invited to an exclusive preview. Guests were first hosted to a cocktail reception at the Vinta Bar patio and served an option of punches – Sapak, a refreshing mix of salabat, watermelon and Benefiber; and Davao Punch, a rich mixture of guava, calamansi and pomelo – while being entertained to Sining Tala’s Singkil.

“With Davao being home to abundant and fresh local produce, we are happy to present a mix of flavor and culture to your dining experience”, said Hotel Manager Bryan Lasala in his welcome speech. To officially launch their Filipino Food Fiesta Dinner Buffet, joining him in a ceremonial breaking of the Salt-Crusted Maya-Maya were Guest Celebrity Chefs Rolando and Jackie Laudico who personally prepared the dishes together with Waterfront’s Corporate Chef Giovanni Sias and Executive Chef Bienvenido Chavez.

Café Uno’s fusion of Filipino and Mindanaoan cuisine highlights Maranao and Tausug dishes made with the Laudicos’ signature style of cooking. “Everything is done from scratch, using the best quality and seasonal ingredients we can find, Chef Lau quipped. The dishes include Piyanggang Chicken (cooked in coconut milk flavored with burned coconut), Piaparan Shrimps (creamy curried shrimps with grated coconut), Tiyula Itum (beef black soup with burned coconut), Sayur Nangka (young jackfruit curry), Fish Piyalam (baby Lapu-Lapu in turmeric and lemongrass sauce) and a lot more.

To top off the delectable dining experience, Chef Jac boasts a variety of cakes and pies. For this buffet spread in particular, she chooses to feature Davao’s Durian with signature desserts like Durian Fruit Pavlova, Durian Tiramisu, Durian Caramel Cake and Durian Panacotta.
